The NV Pajarete Solera 1851 Rancio is bottled form a very old solera started in 1851, the year the winery was created, and produced with a mixture of red and white Garnacha grapes. The long aging in old oak has given the wine a dark mahogany color with an amber rim and a fragrant, captivating and showy nose of roasted coffee, curry, cardamoms, black olives, dried plums, figs, dates, old varnished wood, beeswax and balsamic aromas of rosemary, thyme and lavender with great complexity. The palate is extremely powerful, with a very long aftertaste, and superb balance between sweetness and acidity: the 186 grams of sugar are unnoticeable, they are very well-integrated.
